QUINCY, MASS.—Next Step Living’s EcoThermal Filter System has earned the Green Restaurant Assn. endorsement by meeting its rigorous environmental endorsement standards.

The EcoThermal Filter System can earn a restaurant up to nine GreenPoints towards becoming a Certified Green Restaurant. This one step can help restaurants achieve 90 percent of their energy requirements.

“Installing an EcoThermal Filter System is a big step towards helping commercial kitchens save energy, while making use of what’s already in kitchens: the cook line,” says Michael Oshman, CEO and founder of the Green Restaurant Assn. “It’s not often that such an innovative product comes to the marketplace that has such environmental benefits.” Each restaurant needs to meet 100 GreenPoints total to become a Certified Green Restaurant and 10 GreenPoints in energy, water, waste, food, chemicals, and disposables.

“Estimates show there’s a $10 billion price tag affiliated with energy use in the commercial food service industry, with 80 percent attributed to inefficient cooking,” says Next Step Living founder and CEO, Geoff Chapin. “The EcoThermal Filter System helps combat that inefficiency by capturing waste heat from cook lines to preheat water, saving kitchen operators thousands by lowering their gas bills.”

The average, full-size restaurant uses 2,500 gallons of hot water daily for food prep, dishwashing and cleaning. By preheating water to 125 degrees Fahrenheit, the EcoThermal Filter System saves much of the natural gas otherwise required to heat water to a sanitary 140 degrees. The natural gas usage reduction restaurants experience—an average of 3,500 therms per year—significantly reduces greenhouse gas emissions. And, a restaurant of this size would save nearly $6,000 on its gas bill in the first year alone.
